Chili chicken & rice

Serves: 6


Ingredients:

2 Tbsp. Olive oil

3 chicken Breast, Cut into cubes

1 Cup chopped onion

2 Cloves minced garlic

1 Cup chopped bell pepper

1 Cup chicken broth

1 15oz Can chili beans

1/2 Cup picante sauce

1/2 tsp Salt

1 tsp Chili powder

1 1/2 Cups rice

Directions:

First you'll need to prepare the rice, add equal parts rice and water to the Instant Pot and close the lid, press the RICE setting and wait.

once complete remove rice and clean Instant Pot


Set your Instant Pot to SAUTE, add Olive oil and the cubed chicken, cook until chicken is browned.

Add the minced garlic, bell pepper, and onion continue to sauté for about 5 minutes.

Close the lid and choose pressure cook, reduce time to 10 minutes and cook on high.

Once the Instant Pot has finished cooking press the release valve to do a natural pressure release.

Pour over rice and serve
